Chocamaca™ and Rainforest Treasure Tea™
Holiday Recipes
It’s always nice to share special recipes with your friends and family over the holidays and at holiday parties. If you want to surprise your guests with healthy holiday treats, try a few of these unique recipes featuring Chocamaca™ and Rainforest Treasure Tea™.

1 cup dried chestnuts 2 ½ cups water  ¼ tsp. sea salt 2 tbsp. almond butter 2 tbsp. kudzu 6 Chocamaca™ ballsLightly toast dried chestnuts in a cast iron skillet. Add chestnuts to water in heavy pot, bring to a boil, cover and simmer 1 hour or until tender. Add sea salt and simmer another 5 minutes. Purée in food mill or blender. Stir in almond butter. Dilute kudzu in ½ cup cold water. Pour diluted kudzu into already simmering chestnut almond cream. Stir continually until mixture has thickened into a silky pudding. Spoon into serving dish or individual cups. Allow to cool. Decorate with Chocamaca™ balls cut cleanly into half spheres. Serve with hot or cold Rainforest Treasure Tea™ or Matte Tea™. |

½ cup Rainforest Treasure Tea™
16 drops Stevia
3 bananas sliced in ½ inch rounds
1 cup carob powder
Place sliced bananas on a flat cookie sheet or plastic tray. Mix Stevia and carob powder in a bowl, adding Rainforest Treasure Tea™ until you have reached pastry consistency.
Spoon mounds or use a pastry sack to squeeze dollops of the mixture onto the banana rounds. Freeze for a minimum of 2 hours and serve. |

1-2 Rainforest Treasure Tea™ bags
4-5 slices fresh ginger
1 quart water
1 cinnamon stick (optional)
Add the ginger to the water and bring to a boil. Add Rainforest Treasure Tea™ and the cinnamon stick, if desired, and let simmer for 10-15 minutes. | |

30 Chocamaca™ balls (chopped) 1-10 oz. bag of organic chocolate chips sweetened with evaporated cane juice 1½ cups of walnuts (chopped) 1½ cups ground raw almonds 1 cup whole grain Kamut flour 1 cup whole grain spelt flour 1½ cups Sucanut (evaporated cane juice) 2 eggs  2 tsp. vanilla 2 sticks butter 1 tsp. baking soda ½ tsp. sea salt Mix together top three ingredients and set aside. In another bowl mix together the remaining ingredients (first wet ingredients and Sucanut and then dry ingredients). Stir in Chocamaca™, chips and walnuts. Bake at 350 degrees for approximately 6 to 8 minutes, depending on the size of your cookies. Bake on airflow cookie sheet for best results. Take out of oven when cookies look done around the perimeter and slightly gooey (undone) in the center. |

2-3 Rainforest Treasure Tea™ bags
3 cups water
1 tbsp. fresh ginger root, peeled and grated
1 pinch ground cardamom
1 pinch ground cloves
¼ tsp. cinnamon
1 cup whole organic milk
Stevia or honey
½ tsp. ghee when serving
Boil water. Add Rainforest Treasure Tea™ bags and spices, then steep for about 10 minutes. Add milk, stevia and ghee. Serve hot. |
